Gnocchi and sausage bake

For absolutely years I’ve hated gnocchi (probably not the sentence you were expecting to see at the start of this post!) I tried it once about 5 years ago, wasn’t keen, so refused to try it again – until now.

A few weeks ago while I was having some time off before starting my new job I was doing a lot of experimenting in the kitchen, either trying out new recipes or creating my own. Gnocchi is something I’ve always wanted to like because I love the idea of it but it never quite sat right with me. I wasn’t a fan of the texture so I decided to mix things up and make a gnocchi bake which was crispy and cheesy on the top but also filled with a creamy tomato sauce.

This recipe was honestly just one of those times where I kept adding things which were lying around my kitchen but when I served it up it was phenomenal and I’ve made it quite a few times since! It’s super speedy and delicious so it’s perfect to put together in a hurry when you get home from work/the gym starving.

Gnocchi 2

Ingredients (serves 4):

6 sausages

1 onion

Mushrooms

2 cloves garlic

1 tsp oregano

1 tin chopped tomatoes

1 pack gnocchi

2 tbsp crème fraiche

1 ball mozzarella

Method:

  1. Preheat the oven to 180˚ Fry the sausages in a pan until fully cooked. Once cooked, cut each sausage into slices and place to one side.
  2. In a separate pan fry the onion, mushrooms and garlic in a little oil until softened. Add the tomatoes, oregano and gnocchi and allow to simmer for 5-6 minutes. Once the gnocchi has started to cook, take the pan off of the heat and stir in the crème fraiche and the sausages.
  3. Transfer into an ovenproof dish and shred the mozzarella onto the top. Bake in the oven for 15 minutes or until the cheese has melted and the top layer becomes slightly crispy.
